CREAMY TOMATO SOUP RECIPE
 

 

3 cups of fresh chopped tomatoes or 1-28oz can of diced tomatoes
1/2
cup celery, chopped
1/4
cup onion, chopped
1 bay leaf (remove before blending)
1/4 cup fresh basil
1 Tablespoon garlic
1/2 teaspoon salt

1/4 teaspoon pepper
1/2 pound
silken tofu
3 Tablespoons olive oil

In a pot, mix together
tomatoes, celery, onions,   bay leaf, basil, salt, pepper and garlic.
Cover and    simmer for about 15    minutes. Remove bay leaf.   
Place ingredients in
blender. Add tofu and oil to blender. Blend until it is a creamy consistency. Serve hot or cold.

Strawberry Ice
 
Take 2 cups of strawberries and 1 cup or low fat milk. Mix ingredients into blender until smooth. Pour into an ice cube tray and freeze.
Add to a glass of milk for a great sweet treat.
